Bacon Slicer - recommendations?

Hi All,

I'm looking for find a commercial type bacon slicer capable of slicing streaky bacon (inc. rind on).

I had a second hand slicer that was woefully poor at bacon, it just wasn't worth trying.

Has anyone used anything that does the job? I don't mind paying the price for something that will definitely work.

I use an Omcan model 300E Italian made deli slicer ... I got it used from someone that didn't know what it was for $80 Canadian and it was in near perfect condition (just needed to replace the sharpening stones that it came with). I find it works great for streaky bacon but it is best when the slab is almost frozen, doesn't smear the fat and cuts very clean that way. So far I have yet to meat (get it meat, oh I suck) some meat that it doesn't slice through effortlessly.

Couldn't tell you a set time, I go more for feel. I find it is best when semi-frozen, not solid but very firm. Guess it depends on the slicer but I know most people find it easier at this point to slice. Sorry can't give you a more precise time.

P.S If you update your location on your profile it would help the good folks here to better answer questions about supplies as some slicers etc are more readily available in certain areas.

You need a large slicer to do a full belly. I bought a 8" slicer at Christmas and it will do no more than a 6" piece but this is all I need in general. This machine will slice so thin that you can see through the slices!!

I found a Brekel on Craigslist and could not believe how much difference it made to me. I'll be using it in two weeks. :D

Berkel, the rolls royce, no doubt, still many hand cranked about that will do through cut bacon, ( loin and belly) in one rasher, reconditioned ones now fetch thousands and are often resigned to sitting as a display in top end butchers/charcuterie establishments, I am biased I used to work on them!

I have a Berkel 827E 12 inch slicer. I love it. It'll handle a product width of 8.75 inches (222 mm). It slices effortlessly everything I feed it, shaved as thin as paper and as thick as 9/16th inches. It's easy to clean. The only concerns for home use are its large size and weight of about 40 pounds.

I was lucky enough to find an Electrolux commercial line 12" slicer on a certain e-auction website-bay for £100. These sell new for well over £1000 and seem to me to be every bit as good as a Berkel etc.

That's true, there are many other good commercial slicers: Hobart, Omega and the like should all perform well.

One think in favour of the Berkel though is that it holds its value and is easy to resell. However, that may be offset by its higher initial cost because of this!

With any of them, ensure that it's complete as spares tend to cost a fortune.
