Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

Okay, I really need some advice here. I have the opportunity to get a vacuum chamber sealer with either a single or double bar sealer. The cost difference is about $125 U.S. is the double the better buy or am i just wasting money?
I'm Too cheap to buy store made sausages, but spent way too much on equipment.
