Aris asked Franco to consider stocking meat mixers. I would like to pass on my experience with using these. For the smaller models (50 lbs and less) these are really no quicker than mixing the sausage mixture manually in a meat lug, though they definitely keep your hands from getting cold, often really cold. One of the main advantages of these is that a considerable amount less heat is transferred to the mixture.
