Meat Mixers

Aris asked Franco to consider stocking meat mixers. I would like to pass on my experience with using these. For the smaller models (50 lbs and less) these are really no quicker than mixing the sausage mixture manually in a meat lug, though they definitely keep your hands from getting cold, often really cold. One of the main advantages of these is that a considerable amount less heat is transferred to the mixture.

If you want one in the UK go to http://www.northerntool.co.uk/ - though i'm sure Franco will stock them eventually (and at a lower price). I think you really have to do ALOT of sausage to justify buying one. At the moment, for myself, it is just another item that would need cleaning.

I used to use my Kenwood Chef to mix. But after mixing by hand in a kneading motion I find the meat has a better texture does anybody else find this?
