Brine curing trout cutlets

Im going to hot smoke my cutlets and need to know how long to brine them for , if youve got a brine recipe all the better :lol: :lol: Gaz

Why not use a dry cure? I use only sea salt - 6 % of the weight and cure for two-three days. Works well and preserves aroma.
