I started this thread back in 2011. Funny how these things survive. Anyway, here in the northeast U.S., orange trout is sold as steelhead trout, and is usually a little smaller than salmon, and has a slightly more delicate flavor. I've never cured it but I imagine it would be good.

I recently cured and smoked orange steelhead trout. It was good, but not as good as salmon, even farmed salmon.

We ate some cooked fresh, and that was good, so I won't bother to cure and smoke it anymore. Salmon is my preferred fish for that treatment. :)
