Smoked salmon à la Grisell

As I remember the Balik, I think they use birch wood, which in my opinion gives an aggressive aroma. I guess that they also smoke at a very low temperature and for a long time, and use less salt. The Balik is also soft in texture. That about meteorology is probably a gimmick. Where the spring water comes in, I have no idea.

Hi all,

Thanks to you all for your comments and encouragement. I have to nail my colours to the mast as say that if I possibly could, I'd aim to get the sort of smoked salmon that I used to get from some very expensive fish shops in London. Made from wild salmon (in those days) it had a wonderfully soft and melting texture that I find so much modern SS (especially in France) lacks, while at the same time having the most wonderfully subtle flavour, it wasn't too salty, it wasn't too smoky and it wasn't too "fishy".

I know - nothing like aiming at the best the market can supply, with absolutely no experience at all. Typical of me.

i'm now smoking a side of salmon too.

i keep the salt low, as my costumers like it that way most. Making a short film about it, will post it when it's ready. the salmon has just started with the second run of the CSG.

99.95% platinum, visible by the rate of heat conductivity - frost on the surface. I sold my apartment and bought four shot-glasses. If that's not madness, I don't know what is.

Yes, I know. The good thing is that the price of platinum is going up and seems to be a better investment than most other things. I think they are more useful than a set of stock certificates.

Its a bargan I see if you damage it and send it to them they will give you credit when you order a new one !!! I think I will look around for an old exhaust pipe and make my own.
