hi all having just built the cold smoker nothing is safe :lol:
question can i cold smoke raw prawns and scallops ,and then flash fry them if so how long would you smoke them for and do you need to brine them first

I wouldn't brine them. I cold smoke salmon in my smokehouse frequently for color & flavor then crank the heat up to cook it through. I'd smoke them in a heavy smoke for 30 minutes to an hour, depending on how much smoke you want, then get them back into the fridge to rest a few hours and let the smoke mellow before you cook them.

I'd be tempted to hot smoke them. Or as Oddwookiee says, a quick, heavy, cold smoke followed by cooking.

Mind you, in this house, I doubt that smoke the scallops, they're too good for that.

only cold smoked the prawns no hot smoker yet the scallops never got as far as smoker :oops: :lol:
