Kippers with a Bradley?

Kippers with a Bradley?

Postby grandsire02 » Fri Sep 28, 2012 11:39 am

Whilst on holiday in Northumberland recently we went to Craster and bought some kippers there. Never had anything like them before - absolutely delicious, and so much so I'd like to have a go at producing my own. Whilst I won't get to the Craster standard I would hope, with a bit of perseverance, to equal or better what's available in Tesco. One of the requirements for kippers is a fairly long smoking period (Craster do theirs for 16 to 18 hours), so the Bradley smoke generator would seem ideal for this length of smoking time with a minimum of attention (e.g. not having to check at 5 am that the smoker is still alight). I'd be interested to hear whether anyone has made kippers with a Bradley and if so what the results were.

I can't see why a Bradley wouldn't work.

FWIW....
Here's an interesting video on the Craster Kipper production process....

There's a few threads come up if you do a search (top of page) for kipper. Other than that, I think that smoking times in a Bradley are often a lot lower than they would be traditionally. Obviously, you'd need to ensure that you can keep the temp below 30°C as kippers are cold smoked.
