best book about smoking

best book about smoking

Guys,
What would you say is the best book available on smoking. Not a beginner's guide so much, but the most in depth book? I have the Marianski books (great), as well as Modernist Cuisine (awesome) but maybe I'm missing something.

Home Smoking and Curing by Keith Erlandson seems to be a popular one. But, the times for smoking are very much in the older traditions of 'really smokey' flavours. I prefer a lighter touch.

Thats a blast from the past - went to his house in Chirk about 25 years ago. he was more famous for gun dogs - especially spaniels. He won the Cocker championship 3 x times in a row with a bitch called Speckle of Ardoon and that records never been beaten. Small world......

My tastes tend to lean towards the Keith Erlandson book as I like all my smoked sausages, bacon and salmon to have a nice mahogany colour.
I have the other books as well. They are all great reading.
