2.3kg slab of "Bad"mozzarella that is.

Intimidated me into buying it for just over £5 :drool: & swore at me when I didn't take his two friends along.
(ok it's not primo stuff but a solid slab of admittedly Arla brand mozzarella-like cheese for smoke induced fun at that price) !?

I've only played around with balls to date (ooer) & a small lump of mozz, so this will be a departure, & am curious as to what you guys think would be optimum thickness for smearing some smoke on?

What's sold here looks to be about 3 cm thick, don't know if that's the best thickness.

Thanks, i'm cutting by eye 207 - 227g slices from the block so nice & thin with a good open area.

Plenty of smoke in there, so hopefully one full load will do the business.

@Wheels, yup that is the chap, not great quality, fine for pizza etc, compared to the real "wet" deal, but you can't look a gift horse in the mouth, & the smoker has been quiet for at least 48 long hours....

A kilo of double gloucester to play with too! ..which whilst destined for the daughters sandwiches, won't begrudge a wee morsel for her dad :wink:

BTW i've rough tooled with solder & snips an energised fan burner which is doing the business currently, ..smoke output upon test lighting is considerable, i've had to rig up some 8inch flexi flue to accomodate the outpourings :shock:

I'd be careful, I much prefer less smoke to more. It's easy to end up with a bitter product with lots.

Mind you, with the amount of smoking you do, you know that better than I do. :wink:

I promise you it's a fast throughflow with a wide capacity chimney, the fan ensures that & i've a 10ft vertical flue on there so it's in like flynn, then out faster than the English cricket team.

the fan has control settings (though i'm just playing around right now) & i'm filling bags of air to get a rough idea of litres passing through per minute / second.
