cook in smoker or oven?

If I am using high barrier or fibrous casings to cook salami/pepperoni without smoke should I still cook them in the smoker or in the oven on a low temp?

An oven or even a hot water bath are used for high barrier casings. No real point trying to do them in a smoker.
