Salted Sprats

Rather than take the Smoked Mackeral thread even further off topic, I thought I'd open a new thread to tell you all that the salted sprats recipe on that thread has worked a treat and tonight we feasted on pissaladiere. It was lovely, even if it was made with sprats as opposed to anchovies (I also cheated with the base and used commercial puff pastry :oops: ).

The flavour of the sprats didn't seem to be as strident as anchovies, nor were they quite as salty. They were still an excellent (and much cheaper) substitute. I may have bought my last tin of anchovies :) .

I just salted up some sardines the same way...

Glad you like the salted sprats. If you want them a bit saltier then just adjust to more salt and the longer you leave it the more salty it becomes. Not a bad recipe for something that started off as a trial in preserving bait for fishing eh! I just thought I would have a little taste.

Just tried one of my sardine "anchovies" in a salad on a medium boiled egg, gorgeous, thanks Paul!
