Today's Smoke

Postby Big Guy » Sat Jul 18, 2009 8:26 pm

I have some Abt's and Moink Balls in the smoker along with a spatchcocked yard bird and a couple of racks of beef ribs. They will be done in about an hour Q view to follow.

Moink balls are a mixyure of 50% beef and 50% pork wrapped in bacon and smoked
The Atomic Buffalo Turds are jalepeno peppers stuffed with cream cheese , topped with smoked chicken, wrapped in bacon then smoked

We do a slightly different version of ABT's, I will take a chunk of pepper-jack cheese, wrap it in spicy italian sausage, place that into the jalapeno, and then wrap it in bacon. I am not a fan of cream cheese, and prefer a meatier ABT.

I have also seen cocktail smokies used, and pulled pork as stuffings for the peppers.
be creative, you might find a real great recipe that way.

There are a million version of Abt's, bacically the only thing is the pepper, some sort of cheese, any kind of filling then wrap in bacon, then either smoke, grill or cook in an oven. They are all good. :D
