It ain't cheap is it? I suppose it is one way to add value to one of the most common commodities in the world.

Smoked Chilies

Postby Epicurohn » Thu Jul 21, 2005 11:31 pm

Chipotle chilies from Mexico are smoked Jalapeos. In Chile they also have an oak smoked chili that are smoked until dry, latter ground to a powder. I tried the latter for the first time last week and they were awesome on grilled Arrechera (Chilean style flank steak - I believe).

I'm hickory smoking some Chile Cabro (Habaneros or Scotch Bonnet). I'll post results when done. Anybody tried anything similar?
