Casings come in a variety of sizes and are usually sold by the hank, bundle, cap or ounce. It is always difficult to estimate how much casing you will need to stuff your batch of sausage. A few rules of thumb:

1 pound of meat will stuff about 2 feet of medium-size hog casing (32-35 mm)

1 pound of meat will stuff about 4 feet of medium-size lamb casing (20-22 mm)

1 ounce of medium-size hog casing (32-35 mm) will stuff about 8 feet of sausage

1 pound of medium-size lamb casing (20-22 mm) will stuff about 16 feet of sausage

Ox runners are typically known as �Beef Rounds�.
Though I have noticed that both sausagemaker.org and scoobiedirect.com both refer to these in HANKS, the term hank is typically used to describe hog and sheep casings only. Beef Rounds are normally measured and sold in �units or sets� of 9, 18 and 30 metres (approx 29 � ft, 59 ft and 98 ft). As the sizes/diameter can vary from between 35 mm to 46 mm and up (1 ⅜ inches to 1 ⅞ inches). I would need to know what size you are planning on using, or if you're buying them from Franco what size he stocks. Unless you want the whole range.

I have often ignored this type of questioning, due to that I do not know the answer.

Well until now that is!

So to answer the question on how much casing is required , I took my tape measure and measured the length of sausage times by six ( I'm talking boar skins) which gave me 2ft 9ins appx per lb

Now you can say, well how much did you fill them by etc etc
My theory says allow 1yard per pound of meat plus water plus rusk.

Any comments ?

Sorry fatman I wasn't aware that you were looking for a figure. You didn't mention the diameter of the casings/skins though I'll assume that they are approx. 32 mm which is a pretty standard size for UK style sausages.

Typically for a normal sized sausage, 1 metre (3 ft) of 32 mm skin is required per 500 g (1 lb) of sausage.

The point I was trying to make was, if we are searching for the amount of skins required to make lets say for arguement 2lbs of sausage and we know that we often get 6 sausages to the lb and each sausage is appx 5 inches long. Then 6 sausages times 5 inches gives us 36 inches i.e. a yard, so for 2 lbs we need 2 yards of skins.

This is of coarse is only my very rough assesment of working out how much casing is required for my 2lbs of sausage meat.

Sorry guys ! I don't do technical jargon and mathematics, but I do hope you find my version helpful.
