I was in Morrisons this afternoon and saw that they were selling packs of 525g pork mince for a £1.00. The fat content was a bit low for sausage at 13% so I spoke to the butcher at the counter and asked if he had any pork fat trimmings. He looked in his 'waste' tray and wrapped me up a nice sized bundle for free. When I examined it, there was quite a bit of lean attached to the fat - so I sneakily put the mince back on the shelf !
Once home I trimmed 860g of pure lean pork off, which left me with 1800g of back fat. Now that's what I call a bargain - free pork sausages for breakfast !!

If I cannot get fresh pork fat, I can usually find packages of pork fatback by Smithfield and or Hatfield. They are vacuum packed packages of about 1 lb for $1 at the local Shoprite or Hannaford supermarket. it does have skin on it so I usually trim it off, cured with salt so soak it or reduce your salt from your recipe.... when there is no fat around gotta make do...
