BEEF BREAKFAST SAUSAGE

i call them breakfast sausage but i have them any time of the day
I just love making these so easy to do
i bake mine at 180c for about 20-30 mins
then serve with onion gravy and mash
or have them in a good old fry up

BEEF BREAKFAST SAUSAGE

1kg beef chuck steak
100 grams finely ground rusk
1/2 onion, finely minced
2 garlic cloves, crushed (not to big a clove)
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
100ml Iced Water

cut beef into chunks to go through mincer coarse grind first
but mince into bowl and add salt pepper
onion garlic and mix by hand
then add rusk then mix again by hand
place the mince after mixing in fridge for 1 hour to chill
before grinding again
then grind through the fine plate
then fill sausage skins with a sausage stuffer tube
place sausages in fridge to cool down and the flaver to improve
around 3 hours
