how do you add more fat to beef
if it have not got a lot of fat
as I have some very lean beef which I got to use up in the next few days or so

I'd add pork fat, maybe try 20% bacon/belly meat.

Or if you want to keep it all-beef, you can buy some fatty beef and mix it with the lean meat
