Here's my recipe for bread. I use a machine most of the time because I have a bit of a disability that makes things like kneading difficult.
Anyway, I never vary the proportions whatever machine I use, I always use the basic white setting and I add flour/water if needed in the early stages of the programme until the right dough is achieved, then I let the machine do the work. I must say it has worked very well combined with the hot dish method, and should be OK if you make bread by hand from scratch.
Ingredients:
3.5 cups bread flour, I use 1.5 wholemeal and 2 white.(Waitrose extra strong Canadian is good)
1.5 cups warm water
2 tblps sugar
2 tblsp dried skimmed milk
2 tblsp olive oil
2 tsps salt
1 tsp lemon juice
2-3 tblsp mixed seeds (you can leave these out if you want)
2 tsps dried yeast
That lot goes into my bread machine in the order required, I've never used it to make bread by hand, should be OK though.
