Hi everyone Im just about to embark upon my first ham and have decided upon Oddleys inject and rub reciepe. One question, how deep do I inject?
My thoughts are that the rub will take care of the edges and I should inject a little over halfway to the centre for an even coverage.Obviously more injections of small amounts will help in distribution.

I would try and get some in the centre too. I am doing one today with photos hopefully, see Topdogs Gammon thread in the Curing, Recipes section for any updates.
