Hi all,
Thanks to you all for your comments and encouragement. I have to nail my colours to the mast as say that if I possibly could, I'd aim to get the sort of smoked salmon that I used to get from some very expensive fish shops in London. Made from wild salmon (in those days) it had a wonderfully soft and melting texture that I find so much modern SS (especially in France) lacks, while at the same time having the most wonderfully subtle flavour, it wasn't too salty, it wasn't too smoky and it wasn't too "fishy".
I know - nothing like aiming at the best the market can supply, with absolutely no experience at all. Typical of me.
