I agree with the 'sweet' theme but .......... it has to be done right this I find that a lot of people/company's do very badly :( all they want to do is jump on the bandwagon and go along for the ride and of course the mullah :shock:

It has been the same out this way with the big craze of 'apple wood bacon' ... come on guys ... ow the hell do you get bacon out of apple wood ?? :shock: :roll: .. yeah yeah I know its bacon smoked with apple wood but again it done bad. The write up/description dose not lend to a "mouthwatering" appeal, you know; the "I want, I want" thing

The maple bacon thing although its the 'sweet' thing its not all about that its the combination of the "all" and not the "one" if you get my drift. There is a fine line or in this case a subtle hint of other things complex layers if you will .... dose any of this make sense or am I talking out my rear end :?

vagreys and I was talking the other night about things like this it all came about from something I saw on Facebook (to do with bacon), my idea was to do a apple pie with a caramel sauce (I do this a lot of times) and as a twist add maple bacon bits to the mix. vagreys idea was to do a pear that had been glazed with a sweet sauce with maple bacon bit incorporated .. my comment was this is too sweet it needs something to make it pop or in a sense "I want more, I want more" at the present everything is sweet (nowt rong wiv that) but if you add a twist you can and will put it over the top :wink:

My thoughts was to add a burst of lemon and in talking to vagreys I described it as a 'sweet and sour ' thing or in other words a yin and yang so we came up with a lemon sugar that could be sprinkled on so that one would/will get a sudden burst of the sour along with the sweet.

I see on Facebook that you are doing a 'Chile bacon' :?: if so your challenge is to describe it not as you did on Facebook but as a promotion thing ......

To my thinking this bacon is on the hot/spicier side .... prove me wrong ( i have some ideas on what I would do but need to know your thoughts first)

On a side note ... please any one who reads the above; this is not a put down .. far from it ... it is probably the deranged ramblings of a bacon curer that don't know his rear from a hole in he ground and I will take this time/moment to apologize to all if it has come across that way :(

Couldn't agree more Robert, sweet is too much if that's all there is...

I went down a spiced and the hot route on a few to leave something lingering on the palate that wasn't just sticky sweet.

There is a warm spiced recipe I will post that has stood up well to repeated tests and a hotter chile one that some of our chef/caterer clients keep coming back for (I will post this too).

The coffee and marmalade (lazy sunday morning bacon:) ) is a trickier one to get right, but when you do...oh my!!

Ps you are spot on about well made maple, it gets right into the meat and is the one bacon that I really do prefer hot smoked (the shame of it...;) )

Hot Bacon (2 versions) that have gone down well.

Salt on bellies first then add everything else to slightly warmed honey (with a tablespoon of oil to keep it from being too gloopy) and rub all over.

V.1
25g All purpose curing Salt
200g Local blossom Honey
15g Crushed red chilli flakes
15g Black peppercorns (toasted and cracked)

V.2 (careful)
25g All purpose curing Salt
200g Local blossom Honey
20g Crushed dried Peperoncino Etna
15g Black peppercorns (toasted and cracked)


Cold Hickory Smoke either of them.

I confess I do like a sweet and salty bacon, but your hot bacon recipes sound really good. might be the ticket to kick up a BLT.
