..maturation, tried again on toast, this is definitely another to have one maturing on the shelf whilst "painting" another over your toast.
opening the jar (perhaps oversized for the contents) there was a good head of smoke scent, which had definitely helped to have rested it a good while in end flavour, like the soy sauce (both products being salt heavy) the smoke was present but more balanced than last time, with good aftertaste.

I guess that wraps it up unless it undergoes chemical alteration on alchemy(ical) sic levels. :)

& there is a big jurassic tar pit of marmite sitting in the smoke alongside the garlic, reckon we'll take it to 10 burns worth of smoke & see what the maturation is like.

I strikes me (unproven) that the marmite simply needs to sit in the smoke then be turned over back in the jar, naturally to keep churning the marmite would get messy & knock back the initial weight & finished weight amounts considerably.

Hmm, scales next time.

I'm following with interest, and I don't even like Marmite. The ideas or tricks may end up being generalizable to something I do like.
