I think the opportunity to try manuka wood / dust in the uk is one of those quests best left to Hobbits, it'd be a strange old day to see some for sale over here.

I'll pass the egg smoking baton to those who have "got (manuka) wood"

Don't tempt me, i'd love some dust but that's all my set up is capable of, however yes it does appear (at least by whoever inputted the Wikipedia page, that it is excellent for smoking foods, but states little else)

As a well known & proven useful scrub tree, perhaps yes you could be onto a winner there & get something rolling small scale, manuka is almost a protected brand (a bit like the "Cornish" pasty) & unique to NZ however it's a name anyone with common sense knows to denote a premium honey, medicinal product etc (clever marketing perhaps)?

I'd love to try some can you fill the pockets of a backpacker & get them to call me when he reaches Cambridge!? :wink: ..cos packet post mail service isn't cheap is it!?

Hmmm how to turn it into dust? I wouldn't want to use my chainsaw as I use waste oil as my chain lube. I have a mate heading to Denmark next year sometime, otherwise if you would like to send me your address in a pm I could send you a sample and you could do some research on how viable it would be to get a small market started. Just need to figure out a good way to make dust.

Sam, I had a look on google & it's clear there is at least a localised (NZ) market, however beyond that it's clearly an unknown qty, if it's encroaching scrub that needs clearing there may very well be several grants available / business grants that could be worked positively with marketing spin as a small operation, worth looking at NZgov agricultural website maybe?

The shavings I saw were just that, fairly rough based on a small market & good enough probably for hack job (read amateur) small scale smoking I anticipate.

I'd look at existing processors nearest to you as a sounding board, likely that depending on oils it may simply tar too much, or it may justbe deemed a local & thus unexploited commodity awaiting somone to take charge & build up perceived value, what's it comparable to?

I'd start by looking in a fishing shop / online at the packets & sussing out distributor & the business making it to that grade & the labour to make it a wider scale product, suss out pro's & cons, sample batch from a verified source, establish a relationship & see what happens.

Take a look at animal bedding producers (again shaving dust produced with purpose) ..for example.
Who uses the wood & what for, is it someone else's byproduct if so what would it take to make it certifiable as a food product for various certifications? (eventually)

There are many business waste streams going to landfill just waiting for a small change of route & routine.

If you find how adaptable it is to the various sizes of chips & dust grades then you will have made a big leap as to how widely it could be incorporated, fine mesh, wide mesh, pan, hot & cold smokes, take the Ashwood (uk site) for example they both import & produce in their own factory.

I'd ask someone random like Bradley (& on another continent) what they've tried & decided won't work & on what basis, start far from home.

I've cold smoked raw eggs in their shells whilst doing some bacon....I wasn't impressed.

Yup, they're due on the smoker this week-end, will see how they stand up to pickling, which i'll have to get my head around, I love pickled eggs, (got 4 varieties jarred & ready to go currently, with a penchant for the chili pickled variety they need to stand up to that too, so I hope we can get good penetration rather than have it disappear in the pickle vinegar.
will put a dozen through (for a small jar) ..as I have about 120 currently, potentially a mass of cholestrol, but they do last well.

We are The NZ Manuka Egg Company, we cold smoke our eggs through a cold smoking process, we are the first in the world to smoke an egg and keep it raw. Because the shells are porous, the smoke breaths throught the shell and changes the flavour of the egg, then you can use it anyway you want too, boiled - scrambled - poached, made into quiche, mayonnaise etc. If you have any questions let us know, also check out our website, www.nzmanukaeggs.co.nz......
