I don't know if you want to add this to the database, Franco. I made these Saturday, and they are absolutely deeeeelicious!

1kg pack mixed game
500g fatty breast of lamb
2 tbl fresh sage leaves
7-10 juniper berries
2 large shallots

1 1/2 cups rusk
2 tbl white peppercorns, ground
1 tbl salt
2 tbl bramble jelly (redcurrant jelly is fine)
I used the smallest casing I had - hog, I think.

Coarsely mince the first five ingredients. Add the next four, mix thouroughly. Fill your casings! I left them for 24 hours before eating, and they were very good, with little juniper explosions of taste every now and then. Actually after 20 mins in the oven the dish was very dry, so I pricked them. The the fat came out and left the sausage nice and moist.

Mmm. Been to Borough Market? I'm not great on London butchers, but if you're ever out Surrey way there is a good one in Claygate. There is also a game dealer on the A1, I think at Holloway.

Where about's in Central London are you based/situated? I'm originally from the UK (Born in Harrow, Middx and grew up in Whitechapel) If I know the rough area I might be able to let you know of a game butcher (special license required) in your area.

A lot of the larger Waitrose stores are selling various game meats including a mixed game meat pack.

I'm sure that the fishmonger just off Marylebone high St does game - can't remember the street but it is close to the BBC London studios and the Sun Pub (ah, memories). A great shop with big windows open onto the street. Do you know the one I mean? Virtually on the corner of the high st.

I will probably mess around with the first six, never been much of a frog person

All joking aside, in the next couple of months you can expect to see "Tinned Frogs" (frogs in tins) hitting (not literally) the UK supermarket shelves. As Dave Barry would say "Really ... I'm not making this up." It's all the brain child of a Northeastern Thai women.
