As the weather cools, I'm getting ready for my first try at sausage making. I expect I'll start with an italian sausage, but I'm looking forward to making dried sausages -- coppa, sopprasetta, merguez.
My problem is figuring out where to hang the sausages. My house is in a pretty wooded area, and my basement is unfinished -- lots of spiders, flies and other bugs. In fact, there really isn't any part of the house that is free from some flying/crawling bugs. Should I try to build some type of screened in box to hang them?

Hi Meat! Still hang your sausage in your basement but surround them with cheesecloth or netting, this will keep the bugs out. For the time being you can make a lagre enough frame with a door and attach the netting to it then hang it from your floor joist,a contraption somthing like that should do the trick?Good luck!
