Tasty Tandoori Turkey sausages

Hi All

I had some turkey breasts left in the freezer ( boring ) so had a play around and came up with this, it's both tasty and a healthy option.

Prepare turkey as per normal for minceing.

In a seperate container prepare per Kg:-

6 Tbs of yoghurt
2 tsp green chillie
1 tsp fresh ginger peeled
1 clove garlic
salt to taste ( I used 1/2 tsp )
large pinch red chillie powder
2 black cardamom (seeds ground)
2 tsp garam masala
2 tsp white vinigar
1 Tbs cooking oil

Blend the above to a smooth consistency then mix with minced turkey, add rusk approx 2 tbs to absorb yoghurt mix and give workable mixture for filling.

I have only tried these fresh at the moment which gives a nice succulent pattie and sausage, I will freeze some to see the results, I would appreciate any feedback from the use of yoghurt in the recipe in place of fat.

They sound delicious Ian.

One point tho about the yoghurt, generally it doesn;'t freeze well (tends to seperate) although you might get away with it with all the other stuff and rusk

Another point about freezing, you said the breasts were already frozen. You shouldn't defrost and then re-freeze.

I must say that those sausages do sound delicious. I should think that with a slight increase in rusk that it would absorb the yoghurt and prevent splitting/seperation, and given a few hours in the fridge resting before stuffing, would take in all the other flavours...

and as rusk is probably more flavoursome than turkey.. joking..

Seriously though, I may well try those soon.
