Cheap Whiskey Marinaded Chuck Roast

Cheap Whiskey Marinaded Chuck Roast

Postby NCPaul » Tue Sep 28, 2010 12:42 am

My late mother found this in a magazine and I have never varied from it. It seems unlikely from the simple ingredients but I love it. I think it calls for cheap whiskey because it is just used in a marinade but Mom maintained it was a necessary preventative measure to insure dinner actually got cooked.

2-4 pound chuck roast
1/4 c. cheap whiskey (bourbon)
3/4 c. soy sauce
1 1/2 c. water
1 T. lemon juice (1/2 lemon)
2 t. Worstershire sauce
pepper
paprika

Marinate the roast for 8 hours in the liquid ingredients. Rub with pepper and paprika to coat. Grill over a hot fire then move from heat and cook to desired doneness (I shoot for med. rare) basting every ten minutes or so. This should take about 90 minutes total. Rest, then slice thinly. This could probably be done with a broiler and an oven though I've never tried it. Some pictures:
