Hi all/
I promised (somewhere) to post a recipe for lightly spiced Turkey Sausages - here it is :
2.2 kg Turkey Breast (cheap in Lidl Supermarket)
950 g Pork Back Fat (�1 from my local butcher)
260 g Chopped Leeks
200 g Red & Green Bell Peppers, seeded & chopped
2 tbsps Minced Garlic
1 tbsp Chilli Powder
2 tbsp Salt
2 tsp Sugar
1 tbsp Smoked Paprika
315 g Rusk
460 g Chicken Stock (Water mixed with two Chicken Stock Cubes)
Vegetable Oil
Method :
Saute the minced garlic, leeks, peppers & chilli powder. Set aside.
Mince the Turkey & Pork Fat with the coarse plate.
Mix the Rusk & Chicken Stock - allow to cool.
Combine all the ingredients and mix well. Mince again with a medium plate.
Stuff into hog casings (I used the medium stuffing tube resulting in 57 good size sausages).
Refrigerate overnight, then vacuum-pack, freeze, or eat them!
Note : They were very tasty, but a little mild for my taste. Next time I will double the vegetable content, and use 2 tbsps Hot Smoked Paprika.
Might also double the chilli powder!
