Potato Piglets

During the Second World War, food was put on ration and bacon, ham and other meats was one of the first to be rationed . Sausages were scarce and pig clubs were formed by groups of people who shared the work in rearing the pigs and then shared the meat when the pig was butchered. One of the recipes to come out of this period was Potato Piglets, you core a potato like you would with an apple and fill the centre with a sausage, bake for one hour at 220 degrees or at gas mark 6.

Sure do sound yummy. Sounds like a good way to skip the casing step too. Just squirting it in there should work. Gonna have to give that one a whirl. Thanks for sharing.
