Has anyone got any recipes for bunny pie.I'm thinking of bunny and carrot pot roasted to get the flesh off the bones but I'd be interested if anyone had any better ideas. :)

Rabbit Pie

2 cups cooked, rabbit diced
2 Tbs. oil
1 can cream of mushroom soup
� can cream of broccoli soup
2 Tbs. onion, chopped fine
3 cups potato, diced
� cup frozen peas
1 large carrot, diced
1 stalk celery, diced
1 cup milk
� tsp. garlic powder.
2 10 inch pie crusts

In a 2qt. sauce pan, brown cooked meat in oil. Add the soups, onion, peas, potatoes, carrot, celery, milk, and garlic powder. Simmer together for 25 minutes. Pour filling into an unbaked 10-inch piecrust, add top crust, seal the edges and cut some vent holes. Bake at 400 for 60 minutes.

Running Rabbit Hot Tamale Pie







Scraps of left over rabbit meat...enough to equal about 2 cups. (Can be varieties of game meat mixed)
1 medium sized onion chopped
Water to cover all generously
Boil until onion is fully cooked. Drain saving the broth. Put meat and onion through food chopper using fine blade.
(this is one of the old hand crank models, so using an electic one meat needs to be finely shredded but not paste).
Add chili powder to taste. I use enough to color the mixture about the same color of the chili powder. Add enough broth to moisten well - but not soupy.

Make corn meal mush using -

1 C. yellow cornmeal
1 C. cold water
Mix Well

Pour slowly into 3 C. boiling water with 1 tsp. salt added. Cook until very thick over low heat or in double boiler.

Grease a glass baking dish...size 8"X10"X1 1/2" with oleo .
Put a layer of mush in the bottom of pan. Put in the meat mixture on top of the mush, finally top with a layer of the mush. Grease the top layer lightly with oleo. Bake at 350 degrees until lightly brown around edges. (Will have a crusty appearence on the top.)

Serve with chili beans and lettuce wedges.

Chili beans are made by using :

2 Cans (16 oz) Red Kidney Beans
1 finely chopped onion
chili powder to taste

Saute onion in skillet with oil. Add beans and chili powder, cook until liquid is very low.

Soak lettuce wedges in ice water with garlic salt to taste.
