anybody got a recipe for pork and leek?
found a recipe on what volume to use,but does not give you the recipe for seasoning.
leek
rusks
pork shaoulder
water
seasoning?(what would go into the sasoning)????
white pepper?
salt?
???

Take a look in the FAQ section for a few sausage recipes. I would suggest you go with this one http://forum.sausagemaking.org/viewtopic.php?t=728 and add some softened/sweated down leeks.

Remember that, before stuffing the casings, to make a small pattie and fry it for a taste test and adjust the seasoning to your taste.
