I have just spent a couple of days "Up North" in Cumbria and I was most impressed by the scenery and also the Westmoreland sausage that was dished up at the B&B. Has anybody got a recipe for this sausage?
I cannot find reference to a Westmorland sausage recipe I wonder if is is not a derivative of a Cumberland sausage
Regards Sausagemaker
It is. It's a Cumberland with a stronger blend of spices. It's not traditional sausage just a heavily spiced variation probably conjured up by a Westmoreland butcher.
Thanks Sausagemaker and Spuddy for your replies I did suspect the "Westmoreland Sausage" was a variation of the Cumberland although they looked different on the Butcher's slabs in Kendal, they were stuffed in sheepcasings and were about 6 to 8 inches long. I must admit they had a cracking taste and I will attempt to duplicate them
