Recipes for all sausages

I make sausages commercially, so I do like looking here for new ideas. At work my favourite sausage is one I made myself. I call It Oriental Smoked Dragon�It does take a little time to make. But if you like Hot Sausages, your shore to like this one. First gather the ingredients: 50grams Paprika, three Hot Chillies (the hotter the better)Diced and 10 grams of salt
Now you may need some equipment for this, you need to combine the ingredients, then smoke them with oak sawdust? This can be achieved in a wok. I use my commercial smoker. So experiment. Now for the easy bit. You need a Cumberland sausage seasoning, any recipe from this site will do the trick, but I like this one:

Cumberland Sausage
4lb Pork Shoulder
1lb Pork Belly
1/2lbRusk
12 fl.oz Water
3ozSpice Mix


SPICE MIX
72% Salt
13.5% Ground Black Pepper
4% Ground Nutmeg
4% Ground Mace
4% Ground Coriander
1.5%Sage
And last of all the smoked mix.

Fill the sausages in the normal way, link and enjoy. Goes well with a good pint of Bitter.

try it you may like it? basicly its a cumberland sausage with an extra 1lb of meat with the smoke mix added, good luck... lets Eat the dogs
