95% Fat Free Sausages.

Postby David. » Mon Jan 24, 2005 11:26 pm

I had this sausage at a freinds house last time I visited the U.K. I think it was made by Boywers? It was quite tasty and moist for a commercial sausage. I wrote down the ingredients and have tried to duplicate it without success. Any suggestions.

Pork 66%
Water
Rice (cooked)
Dextrose
Salt
Skimmed milk powder
E 407 E451
E223
Spices
E300
Herbs.

I tried lean ground pork, rice cooked in water and sausage seasoning spices. Mixed it rogether and added more spice and herbs , some Skmmed milk powder and sugar (instead of Dextrose)

The result was pretty awful. Dry, horrible texture and tastless. Have tried many times with various ammounts of rice. But nothing works.

The Sqirrels, Racoons and Skunks love them. My garden is like a zoo when I make them.

Any thoughts / ideas ?

Darkstream seems to be this forums resident low fat experienced person. Though Ill certainly help where I can. Forget the rice, and look at oatmeal and rice flour, for a start. Also the spices will need to be increased "signifigantly" over what you would expect.

Kind regards

PS I have also posted information on several fat replacement products.
