Pork and apple with cider recipe?

Hi all. Got my first whole pig for ages yesterday and have five kilos set aside for sausages but I can't find the recipe I enjoyed so much last time. It was pork with apple and cider. I don't remember the spices/herbs that should be in it. Can anyone help?
