cubed blood pudding?

Postby KyleCaires » Sat Jan 31, 2009 6:14 pm

If a sausage recipe calls for cubed blood pudding, is it referring to:
-unseasoned pork blood
-seasoned pork blood
-cooked blood sausage broken down into cubes
-or something else?

Thank you.

I would have thought: uncooked blood sausage or uncooked black pudding cut into cubes or crumbled.

AS John says, with the proviso that, in order to be solid, a black/blood pudding will have been cooked at a low simmer until the blood coagulates and solidifies.
Curing is not an exact science... So it's not a sin to bin.
