it was the best salami i have ever made, and the best i have ever eaten, anywhere, antime, in any country. it was moist but firm; glistening when room temp; beautifylly red; wonderfully spiced [thank you marianskis]. but out it went because of the garlic smell. i tried to tell old ferrret nose, my SO, that the garlic was from the thai shrimp noodles i made last night, and she was sort of starting to listen to reason. but then she hit me with her bambi eyes, and opened some windows [it is still winter in wisconsin], and so, in the interests of continued domestic bliss, and since she has never griped about the garlic in any other sausage i have ever made, out it went. my tears have finally stopped. good by old friend. i will always remember what might have been. yahrrr! my next wife will either love garlic or have anosmia.
