Elk - Chilli - Cheese Sausage

Postby Dingo » Sun Dec 23, 2012 10:27 pm

Hey hey...here's an elk sausage i made recently that will definitely be in my everyday list;

4lbs Elk Round Steak (or any venison)
1.5lbs Bacon Ends
7 whole serrano chilli peppers (diced 1/4")
30g Kosher Salt
20g Brown Sugar
6g ground black pepper
6g smoked hungarian paprika
6g Dry granulated garlic
2.5g Cure #1 (optional)
1g Dry Cilantro
1cup White Wine
1lb High melting point pepper jack cheese (use whatever you've got..diced 1/4")

Cube & Grind patrially frozen Elk & Bacon through medium plate
mix the spices and wine to achieve a bind
mix the Serrano's and cheese to achieve a balanced distrubtion
Case and hang for a couple of hours to dry.

I thought the 1lb of cheese would be to much, but it worked out perfect. Great cheesy sausage.

Hi Dingo,
The end result looks great. I will make these sausages with beef though, elk is still unheard of here in the wilds of Australia.
Thanks for sharing your recipe.

Robert,
If I shot a roo here I would be treated by our government like The old Osama B.L. It's safer and cheaper to buy whole rumps for $ 4.99 kg.

Dogfish,
They do shoot wild horses (brumbies) here from helicopters by the hundreds on a regular basis. They are just left to rot in the bush. The wounded ones are
forgotten as well. A bl--dy disgrace if you ask me.
Anyhow, my wife is a horsey lady so horsemeat sausage is DEFINITELY off our menu. As a pure bred Dutchman by birth I have eaten lots of horsemeat in the old country, mainly cured, smoked and dried though and thinly sliced.
I have got a proper manufacturers recipe on how to make it with beef.
I could translate the recipe if anybody is interested.
Cheers, enjoy the rest of your holidays.

Hi Jan,
Hope you're having a typical sweaty Brizzy xmas. It was -24c here the other morning. Damn Chilly. Anyway, Horse meat is banned in the US, however I'd still like a look at the recipe if it's not to much bother.

I think the Elk-Chilli-Cheese would work just fine with beef.

If your looking for venison;.. I used to go by this place when I was in Bris-vegas;..(My wife and I used to live/still have property up the road in Gympie...(no Gympanzee jokes now :D ))

http://www.themeat-tingplace.com.au/index.htm

They don't advertise it on their web site, but I used to get some venison from them when I ran out of hunted product. Bit pricey, but when you want it....you got to have it.

Hope its not too hot (i despised the humidity in Gympie  )
Let me know how these turn out with beef.
