Question? if the sage overpowered [dominated?] and the hop/beer flavour got lost [in the background?] will not the mint do the same thing?

You know you are pushing my buttons which means I have to make the sausage/recipe that's in my head. It's not like I have not much to do these days :roll: :lol: :lol: :lol:

I never made mine with sage.
Sage is optional in traditional Cumberland Sausage and I tried Oddleys mix once and it didnt do a lot for me I thought it far better without sage.
So a sausage with no herb flavour and not a lot of hop ,though to be fair I never late hopped my beer and I will do in the next one.Only musing about the mint.but I do feel the need to experiment with lamb or maybe a game meat mix.Venison,rabbit and pheasant mix would go well with this beer I feel
Im open to suggestions about herbs and spices EXCEPT FOR SAGE

Venison would be my first choice or a 70/40 combination of other small game.

I hear you on the sage :shock: I guess summer savoury is out as well :lol: :lol: I will resurrect the recipe I concocted in 1990 after a trip home and had a beef and ale sausage. Please do not wait up as I have a few other project go :roll:

Never had a lot of luck with beef sausage always reminded me of burger in a casing Though beef and ale sounds OK.

Bought only to find out what the flavour was like. I'm a pork man myself, if I was going to make beef sausage for myself it would be 60% beef and 40% pork --- then it might taste Ok instead of a dried out tube. JMO
