Noah martin sausage

In Ontario,Canada there is a very popular sausage made by N. martin which comes in a cloth (cotton?) casing.
Anyone have a clone recipe for this???
As a newbie to this type of sausage, I would sure appreciate whatever help I could get to try and make some of this.

That would be Noah Martin's Country Store Summer Sausage, from Heidelberg Foods Ltd. No idea what they do with their summer sausage, but there are many summer sausage recipes available, including right here on sausagemaking.org. Just do a search on summer sausage.
