Recipes for all sausages

Hi guys, do we have any clues on this?
A friend visiting just made and served up a version of what he called a 'typical' Columbian choripan which was great! chopped spring onions, garlic and a sweet paprika flavour (too sweet for straight pimenton so guessing a spice mix). Got no chance to get a recipe and wondered if anyone has made these before.

anyone out there help me out here? :D
