Cheese and honey

Guys, I've finally got the hang of making sausages, I'm thinking of making some other recipes that incorporate cheese or honey as an ingredient. Any suggestions as to how I can do this and what type of cheese to use? Thanks. :)

Hi Lance Yeoh

I make a shropshire blue sausage (bit like Stilton) and start with Francos leek and stilton mix and then add approx 3oz of Shropshire Blue per Kg into the mix. The results are rather good but you do have to be a lover of the old blue cheese.

I have also foud that when using cheese, fruit is also a good addition, somthing like apricots or cranberries.

I took a recipe for a mild-flavored pork sausage and added leeks (about 6% of the meat weight) and stilton cheese (about 8% of the meat weight), it came out pretty good.
