Turkey maple breakfast sausage

This is my own creation derived from several pork and beef sausage recipes.


1 lb fresh ground turkey
8 oz bacon
1/4tsp white pepper
1/4tsp sage
1/4tsp mace
1tbs maple syrup
1tsp salt
1/8tsp mustard powder
1/8tsp cloves
1/8tsp allspice

I made this into bulk fresh sausage. The only thing is it gets kinda dry if you let it cool off. So cook and eat.

How did you deal with the bacon? Grind or chop?

And how strong was the maple flavor?

It looks like an interesting recipe.

I left it frozen then cut the slabs into one inch chunks and ran it through the grinder with the turkey. It had a very distinct maple flavor but not overpowering.
