bockwurst

When I made this I used half venison and half pork butt

1lb pork/venison
1/8tsp ginger
1/8tsp mace
1tsp white pepper
1/4tsp sugar
1 egg
1-1/2tsp salt
1-1/12tsp nonfat dry milk
5tbs water
4-1/8tsp onion powder

When I made this into a 20 pound batch I used fresh raw onion

This was very good with sauerkraut and fried potatos with onions
