Sweet Italian Sausage

I picked up a nice pork butt last week and made a couple different sausages. 2Kg's each of sweet Italian from the Marianski's, book.

I've always avoided Italian sausage recipes that had coriander, caraway or anything else but salt, pepper, fennel and garlic because it's not the way it's done around here, but I thought I'd give it a shot anyways and I'm glad I did....This is a pretty darn good recipe. and will be making it again.

They look nice Dan! I like a combination of fennel and anise, not so sure about the caraway.
Fashionably late will be stylishly hungry.

I did that same recipe and didn't like that caraway one bit!! My wife did however.... :lol:
