Looking for a recipe for a breakfast sausage with venison and bluberries and the merlot wine. Have looked online and cant find one. I only see it for sale.
Anyone have one??. Had some of this in Vermont last month.. It was great !!!!

Can you not contact the people in Vermont where you ate it?

If not, maybe take one of the recipes on here that looks good. Replace the liquid with water and Merlot, and chuck in some blueberries.

Yes I know where they got it. Some wild game place in up state NY. They sell it but the price is to much for what you get. Plus I have my deer at the processor so making a 5 pound batch should be easy. I plan on doing what you suggest. going to check costco for dried blueberries and if they dont have them then Amazon will be my friend. Also read somewhere about a oz of wine per pound.
Last visit to costco I picked up 5 pounds of very fatty pork bellies. Plan on grinding that up to mix with the venison. If memory serves me right I used 2 pound to 3 pounds of venison.

Be careful with the amount of wine. It can make it difficult to get a good bind.

Add the very cold wine after you have a good bind and give only minimal mixing.

got my merlot wine,blueberries and deer. Just waiting on some casings. Should be able to stuff thanksgiving week.
