Yes it's been forever since I've posted a batch of sausage but this one is worth sharing.
A friend and fellow sausage maker of ours, Martin, (diggingdogfarm) posted this recipe years ago on SMF and it's been on my to do list up till this past weekend. I made a 5 lb batch and wish I had made more. These are down right some of the best fresh sausages I've made, and I’ve made my share of sausage.

You can find the recipe on this thread, post #3
https://www.smokingmeatforums.com/threa ... ost-813826

Check it out!!!

And a few pic's;
Here's five lbs stuffed into 28-30 sheep casings.

Linked up after a night in the refrig, I need to work on my linking, some are a little long.

And a quick quality control test after a day of resting it the refrig

Last night's dinner along with a smoked hot dog that I also tried out this weekend.

I sure wish I didn't wait 7 years to try it. These will be on my go to list for sure.

Thanks for looking. and thank you again Martin for the recipe.

They look great Dan! Just in time for football game tailgating. :D I'm glad Martin shared his family recipe.

Look Good Dan - I'll put them on my list. Did yuo swap some salt for fish sauce like Martin does in the original?

Yes Phil I did, but that's just habit for me and didn't note the amount.
