Finnish Sausage Recipe Wanted

Hey All,

My wife's family is of Finnish origin, and I'm looking for a recipe for a Finnish sausage for a special occasion.

I've found one called Ryynimakkara (https://en.wikipedia.org/wiki/Ryynimakkara) which looks good, but the only recipe I've found calls for pork heart and tongue. I have not been able to find a supplier I can get these from, the same goes for pig/beef blood.

Does anyone have a Ryynimakkara or other Finnish sausage recipe with "regular" meaty ingredients they can share?

From your wife's description of the sausages, do you think that they may have contained these items? If they have blood in them they would be quite dark?

Thanks for your response.

I didn't have anything in mind - just enjoy making sausages and wanted to try something a bit different, and that my extended family would get into.

The funny thing is that my wife is not a fan of pork or any pork based products at all (wish I'd have known that before marrying her! :P ). She won't try any of these.

Hi,
My wife is Finnish. I make what they call saunalenkki, which is sauna link (sausage). It is essentially a ring bologna that you can make with beef. Just source a good bologna recipe or spice mix. I use beef middles for casing and of course smoke it.
