Not quite what I had in mind!

Hi All,

As most of you know I am always searching for non-pork sausage recipes, I came across this one on the internet today, and as the post title says " It's not quite what I had in mind" I still love my animal fats and proteins too much. I was just wondering, has anybody else on the site tried making vegetarian sausages? This was posted in response to a woman worried about her husband's sausage consumption with regard to cholesterol.

Even better is the easy sausage recipe listed below. I know it seems strange to make sausage out of lima beans but this recipe works. You have got to make them out of curiosity. And once you do, your husband can eat them three times a day without a bit a worry from you.

No-Pork Sausage

1 10-ounce frozen lima beans, thawed
3/4 cup vegetable broth (can use a vegetable bouillon cube)
1/4 teaspoon ground dried sage
1/4 teaspoon dried rosemary leave, crumbled
6 tablespoons cornmeal
1-2 tablespoons vegetable oil

In a blender or food processor, coarsely chop the lima beans with the vegetable stock. The lima beans should remain chunky. Then in a medium saucepan, heat the lima bean mixture, sage, and rosemary until boiling. Slowly beat in 4 tablespoons of the cornmeal and cook until thickened and bubbly. Cool to room temperature. Then sprinkle the rest of the cornmeal onto a pie plate. Pat the lima bean mixture into 1/4-inch patties and coat each patty with some of the cornmeal on the pie plate. In a large skillet, heat 1 tablespoon of oil and fry the patties until lightly crisped and browned on both side, about 5 minutes. Add more oil if necessary.

Veggie sausages are fairly easy - the big hurdle is a veggie casing.
